So we have a few of our products that displaying "Pre-Order" but we rather have it say "Out of Stock", but I noticed when I don't have the option for "continue selling if out of stock" turned on for a variant, that specific variant disappears on the site. I provided two screenshots.
What I do notice is that when I have "continue selling if out of stock" turned on for a specific product or variant, the product does show up but has a label for pre-order.

You may need to disable an option "Hide options without availability variants" in Theme settings -> Product -> variants -

And also disable "Continue selling when out of stock" in Shopify admin -> Products - select a product.
