Please note, the layout option applies to all products at your store.
You may have different product page layouts per product. Add gallery-layout-1 tag to the product in Shopify admin -> Products, where 1 is the number of layout from 1 to 5.
Example: Add the gallery-layout-3 tag to product to enable layout #3 for this product -
