Hello, there.
You can enable the option "Hide options without availability variants" as it is shown on the screenshot you sent.
Or enable an option "Default 'Show only available'" at Theme settings -> Collection Page.
After pressing save button check all changes on storefront preview, not in Editor only.
Some features do not work in the correct way in Editor due to technical design of theme Editor.

Hello, there.
The feature "Pre-order" will be activated on your store, if you have these settings for the product at Shopify admin:
- ticked "Continue selling when out of stock"
- Set quantity to 0.
You may need to disable "Continue selling when out of stock" not to show the pre-order labels.
So, out of stock product variants will be hidden.
